A quick easy healthy lunch Lemon Pepper Chicken with Sliced Apples. I honestly never imagined myself caramelizing onions and browning chicken, like they were fried in oil without using oil. Part of my weight lost journey and my 90 day challenge, is eating healthy lean white meats and cooking without oils. I have always cooked with some sort of oil, either spray oil or my favorite olive oil. But not any more!! I cooked the above chicken in 1/2 cup of chicken broth, below is the easy recipe. Enjoy!!
Lemon Pepper Chicken
Ingredients-
Chicken Breast Cubed (100 grams is what I cooked)
2 tlbs. Lemon fresh or lemon juice (or more for your taste)
1/2 Chicken Broth (homemade or from can)
Salt and Pepper
Prepare -
In a small non-stick frying pan add the chicken, chicken broth, lemon juice, salt and pepper and cook on medium heat. Stirring occasionally. Cook until the juices are gone, after that you’ll cook for another 5 mins to brown the chicken a bit. Serve with a sliced apple, an orange or fresh strawberries for a healthy low-calorie lunch. Great for dinner too with a green salad, and a sliced apple.
You’ll notice that my plate has a little dab of mustard on the side, for some reason I wanted mustard (I had just made turkey and cheese sandwiches for the hub’s and smelled the mustard) so a put a bit on my plate didn’t really compliment the lemon pepper.
Believe it or not I wasn’t able to finish this, I have 4 slices of apples left and a bite of chicken leftover.
